  • 750 ml high-proof lemon juice (or alcohol substitute)
  • 4 cups water
  • 3 cups sugar

  1. Thoroughly wash and dry the organic lemons, then zest them carefully, avoiding the white pith.
  2. Place the lemon peels in a large glass jar and cover with high-proof lemon juice. Seal tightly and store in a cool, dark place for 7 to 30 days, shaking occasionally.
  3. In a saucepan over medium heat, combine water and sugar until dissolved. Allow to cool completely.
  4. Strain the infused liquid through a fine strainer to remove peels.
  5. Mix the cooled syrup with the strained infusion in a large bowl until well combined.
