  • 1.75 cups warm water (105-115°F)
  • 2 tsp sugar (optional if using instant yeast)
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves
  • 2 cups confectioners’ sugar
  • 24 tbsp whole milk

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let sit until foamy (about 5 minutes).
  2. Add both types of flour and salt to the bowl; mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place kneaded dough in a greased bowl, cover, and let rise in a warm place until doubled in size (approximately 1 hour).
  5. After rising, punch down the dough gently, transfer to a greased baking sheet, and stretch to fit the pan.
  6. Create small indentations across the surface and spoon raspberry preserves into each indentation.
  7. Cover again with a kitchen towel and let rise for another 30 minutes.
  8. Preheat oven to 375°F (190°C). Drizzle remaining olive oil over the dough before baking.
  9. Bake for about 22 minutes or until golden brown.
  10. Mix confectioners' sugar with milk until smooth; drizzle glaze over warm focaccia before serving.
