  • 4 cups flour
  • ½ cup water
  • ½ cup milk
  • ¼ cup sugar
  • 2 teaspoons salt
  • 1 packet instant dry yeast
  • 3 tablespoons unsalted butter, softened
  • 1 ¼ cups cold unsalted butter, cut into slices
  • 1 egg, beaten
  • 2 bars sweetened chocolate

Instructions

  1. In a mixing bowl, combine flour, water, milk, sugar, salt, yeast, and softened butter until well blended. Knead lightly into a ball and refrigerate for one hour.
  2. Prepare the butter layer by placing cold butter between sheets of parchment paper and beating it with a rolling pin until flattened into a square.
  3. Roll out the chilled dough into a larger square, encase the butter in the dough, and seal the edges.
  4. Roll out the dough into a rectangle and fold it like a letter to create layers; repeat this process three times with refrigeration in between.
  5. After the final chill overnight, roll out the dough again and cut it into rectangles.
  6. Place chocolate at one end of each rectangle, roll tightly, then place on a baking sheet seam-side down.
  7. Brush with beaten egg and let rise in a warm area until puffed (1–2 hours). Preheat oven to 400°F (200°C) and bake for about 15 minutes until golden brown.
