  • 1 medium zucchini, thinly sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup spinach
  • 1 1/2 cups low-fat ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Sauté the bell peppers and spinach until tender.
  2. In a mixing bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper until smooth.
  3. In a baking dish, layer zucchini or noodles at the bottom, followed by half the sautéed veggies and half the ricotta mixture. Top with mozzarella.
  4. Repeat layering with remaining ingredients.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
