  • 1 ¼ cup all purpose flour
  • ½ cup unsalted butter, cold and cut into ½" cubes
  • 1 teaspoon granulated sugar
  • 1 teaspoon fine sea salt
  • ¾ teaspoon freshly ground pepper
  • 1 egg yolk
  • 2 tablespoons heavy cream
  • 8 ounces goat cheese
  • 23 tablespoons heavy cream
  • 2 medium lemons, zested and juiced
  • 1 ½ tablespoons chopped parsley
  • 1 tablespoon chopped chives
  • ½ teaspoon fine sea salt
  • ½ teaspoon freshly ground pepper
  • 1 can medium California Ripe Olive, green or black
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • ¼ teaspoon salt
  • ¼ teaspoon fresh cracked pepper
  • 1 teaspoon chopped parsley
  • 1 teaspoon chopped chives

Instructions

  1. Prepare the crust by combining flour, sugar, salt, and pepper in a food processor. Add cold butter and pulse until crumbly. Mix egg yolk and cream; add to dry ingredients and pulse until dough forms. Chill for 30 minutes.
  2. Make the filling by blending goat cheese with heavy cream until smooth. Stir in lemon zest, parsley, chives, salt, and pepper.
  3. Roll out chilled dough and cut into circles for tartlet pans. Fill each shell with goat cheese mixture.
  4. Combine olives with olive oil, garlic, lemon juice and zest; spoon over filling.
  5. Bake at 375°F (190°C) for 20-25 minutes until golden brown.
