  • 34 large peaches, peeled and sliced
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly and press into the bottom of the pan. Bake for 15–18 minutes until lightly golden.
  3. Toss peach slices with sugar, lemon juice, and vanilla in another bowl while the crust cools.
  4. For the crumb topping, mix flour, sugars, cinnamon, and melted butter until crumbly.
  5. Spread peach filling on the crust and top with crumb mixture. Bake for 45–50 minutes until bubbly and golden.
  6. Let cool completely before slicing into squares.
