  • 1 1/2 cups Almond Flour
  • 3 tbsp Butter (melted)
  • 1 1/2 tbsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1 cup Creamy Peanut Butter
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 cup Almond Flour
  • 1 cup Chocolate Chips
  • 1 1/2 tbsp Coconut Oil

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix almond flour, melted butter, 1 1/2 tbsp maple syrup, vanilla extract, and salt until combined. Press into the pan. Bake for 10-12 minutes until golden brown. Cool completely.
  3. For the caramel filling, mix peanut butter, 1/3 cup maple syrup, vanilla extract, and almond flour until smooth. Spread over cooled shortbread and freeze for at least one hour.
  4. Melt chocolate chips and coconut oil together until smooth. Dip each bar into the chocolate coating fully and place on parchment-lined tray.
  5. Optionally drizzle remaining chocolate on top and sprinkle with sea salt. Freeze for about 10 minutes to set.
