  • 4 cups diced butternut squash
  • 2 tbsp canola oil
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup couscous
  • 1 cup boiling water
  • 1 1/2 tsp canola oil
  • 1 1/2 cups minced red onion
  • 1 lb ground turkey
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. Prepare couscous by pouring boiling water over it in a pot; cover and let sit for 5 minutes.
  5. In a skillet, heat canola oil and sauté red onion until translucent. Add ground turkey and cook until browned; season with spices.
  6. Stir in chopped Swiss chard until wilted, then mix in cooked couscous and roasted squash.
  7. Drizzle lemon juice before serving.
