  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt until evenly combined.
  4. Gradually add the dry ingredients to the wet mixture while gently stirring until just combined.
  5. Fill muffin pan lined with silicone liners about two-thirds full with the batter.
  6. Bake for approximately 18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack.
