  • 1 Carrot
  • 1 Celery
  • 1 Potato
  • 5 Garlic Cloves
  • 1 Can Cooked Butter Beans
  • 1 Can Chopped Tomatoes
  • 2 tbsp Tomato Purée
  • 1 tsp Dried Oregano
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chili Flakes
  • 125 ml White Apple Vinegar
  • 1000 ml Vegetable Stock
  • 150 g Pasta (your choice)
  • Handful of Fresh Basil
  • Handful of Spinach
  • Olive Oil
  • Salt
  • Black Pepper

Instructions

  1. Finely chop the onion, carrot, celery, and potato; mince the garlic.
  2. In a large saucepan, heat olive oil over medium heat. Add the chopped vegetables with a pinch of salt and sauté for about 5–10 minutes until softened.
  3. Stir in minced garlic and cook until fragrant. Add tomato purée, oregano, paprika, and chili flakes; cook for another few minutes.
  4. Pour in white apple vinegar followed by the butter beans, chopped tomatoes, and vegetable stock. Season with salt and pepper; bring to a boil then simmer for 10–15 minutes.
  5. Add pasta according to package instructions until nearly al dente. Stir in spinach and basil just before serving until wilted.
