  • 2 cups cooked jasmine rice
  • 1 lb boneless skinless chicken thighs
  • 1 cup fresh pineapple (cut into chunks)
  • 2 cloves grated garlic
  • 1 tbsp grated ginger
  • 1 cup cooked edamame beans
  • 1 small red onion (sliced)
  • 1 large carrot (shredded)
  • 1 whole avocado (sliced)
  • 1 cup baby cucumbers (sliced)
  • 2 stalks spring onions (chopped)
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple vinegar
  • 1 tbsp tomato paste
  • 2 tbsp pineapple juice
  • 1 tbsp sriracha
  • 1 tbsp toasted sesame seeds
  • 2 tbsp light mayo

Instructions

  1. Prepare the marinade by whisking together soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, grated ginger, garlic, and sriracha in a mixing bowl. Add the chicken and marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat for about 6-7 minutes on each side until fully cooked. Let rest before slicing.
  3. In serving bowls, layer cooked jasmine rice as the base and top with sliced avocado, pineapple chunks, edamame beans, shredded carrot, red onion slices, baby cucumbers, and chopped spring onions.
  4. Drizzle with light mayo and sprinkle toasted sesame seeds before serving.
