  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and freshly ground pepper (to taste)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into 1-inch chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into 1-inch pieces)
  • Fresh parsley (for garnish)

Instructions

  1. 1. Heat the vegetable oil in a Dutch oven over medium-high heat.
  2. 2. Season the beef with salt and pepper; brown in batches until browned on all sides. Set aside.
  3. 3. In the same pot, sauté onions until they start to brown; add garlic and cook until fragrant.
  4. 4. Stir in tomato paste and flour; cook for about two minutes.
  5. 5. Add beef broth while scraping the bottom of the pot to release flavor.
  6. 6. Return the beef to the pot along with Worcestershire sauce, brown sugar, carrots, and potatoes.
  7. 7. Bring to a boil, then cover and reduce heat to simmer for about two hours until meat is tender.
