  • 1 lb ground beef (or ground turkey)
  • 23 roasted green chiles (Hatch or poblano), peeled and chopped
  • 1 large potato, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, then add garlic for another minute.
  2. Increase heat to medium-high and brown the ground beef or turkey in the skillet.
  3. Add diced potatoes and cook for about 5 minutes; then mix in tomatoes and green chiles.
  4. Stir in spices and pour in broth. Simmer covered for about 20 minutes until potatoes are tender.
  5. Optionally add peas during the last five minutes of cooking.
