  • 3 cups cooked pasta (rotini or penne)
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of half a lemon

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and cool under cold running water.
  2. In a small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, dried oregano, garlic powder, salt, black pepper, and lemon juice.
  3. In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
  4. Pour the dressing over the salad mixture and toss until evenly coated.
  5. Chill for at least 30 minutes before serving to enhance flavors.
