  • 1 cup diced yellow onion
  • ½ cup diced carrots
  • ½ cup diced celery
  • 5 cloves garlic (minced)
  • 2 strips lemon peel
  • ½ tbsp dried oregano
  • 2 bay leaves
  • 6 cups chicken broth
  • ½ cup dry white rice
  • 1 egg
  • 1 egg yolk
  • 2 cups shredded chicken breast
  • 34 oz baby spinach
  • ¼ cup lemon juice
  • 1 tbsp fresh chopped dill
  • salt + pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions, carrots, celery, and lemon peel for about 5 minutes until tender. Add minced garlic and cook for an additional minute.
  2. Stir in oregano and chicken broth; bring to a boil. Add rice and reduce heat to medium-low; simmer for 10 minutes.
  3. Remove bay leaves and lemon peels. In a bowl, whisk together eggs; gradually incorporate hot broth to temper the mixture.
  4. Slowly add tempered eggs back into the soup while whisking continuously. Mix in shredded chicken, spinach, dill, and lemon juice; cook until warmed through.
