  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, place chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until the chicken is cooked through (15-20 minutes). Remove chicken and let cool.
  3. In another pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for about 5-7 minutes until softened.
  4. Stir in minced garlic; sauté for another minute until fragrant.
  5. Shred the cooled chicken and add it back into the pot with sautéed vegetables.
  6. Add orzo pasta along with additional chicken broth as needed. Stir in lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  7. Simmer for approximately 10-12 minutes or until pasta is fully cooked.
