  • 1 1/2 teaspoons instant espresso
  • 2 large egg whites
  • 5 tablespoons white sugar (divided)
  • 3 large egg yolks
  • 2 large whole eggs
  • Cocoa powder (for dusting)
  • 7/8 cup heavy cream
  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • 2 tablespoons brewed coffee (or coffee syrup)
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sift together flour and espresso in a bowl; set aside.
  3. In a mixing bowl, beat egg whites until soft peaks form, gradually adding 5 tablespoons of sugar until stiff peaks form.
  4. In another bowl, whisk egg yolks and whole eggs with remaining sugar until pale.
  5. Gently fold dry ingredients into egg yolk mixture, then carefully fold in whipped egg whites.
  6. Pour batter onto the prepared baking sheet, spreading evenly. Bake for about 8 minutes or until lightly golden.
  7. Cool slightly before rolling in a clean kitchen towel dusted with cocoa powder; let cool completely.
  8. Whip heavy cream with confectioners' sugar and vanilla until soft peaks form; fold in mascarpone until smooth.
  9. Unroll cooled cake, spread filling evenly, and reroll gently without using the towel.
  10. Chill in the refrigerator for at least an hour before serving; dust with cocoa powder just before slicing.
