  • 150 g dark brown sugar
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 2 1/4 tsp ground ginger
  • 2 1/4 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 165 g unsulphured molasses
  • 360 g sour cream (room temperature)
  • 110 g vegetable oil (e.g., avocado oil or canola oil)
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 300 g butter
  • 150 g full-fat cream cheese
  • 550 g powdered sugar
  • 1/2 tsp vanilla paste
  • Mini Gingerbread Cookies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a bowl, combine all-purpose flour, baking powder, baking soda, salt, and ground spices. Whisk together until evenly mixed.
  3. In another large bowl, use an electric mixer to beat together dark brown sugar, unsulphured molasses, sour cream, vegetable oil, eggs, and vanilla extract until well combined and smooth.
  4. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined. Do not overmix; small lumps are okay.
  5. Divide the batter evenly between the prepared cake pans. Bake in preheated oven for about 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from oven and allow cakes to cool in pans for about 10 minutes before transferring them to a cooling rack to cool completely.
  7. In a clean bowl, beat together butter and cream cheese until smooth. Add powdered sugar and vanilla paste gradually while mixing until smooth and fluffy.
  8. Once cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top before placing the second layer on top of it.
  9. Frost the top and sides of the cake with remaining cream cheese frosting. Decorate with mini gingerbread cookies as desired.
