  • 2 cups cauliflower florets
  • 2 cups sliced carrots
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the vegetables under cold water. Chop broccoli and cauliflower into bite-sized pieces; slice carrots; and chop bell peppers.
  3. In a large mixing bowl, combine all the vegetables. Drizzle with olive oil, then add minced garlic, salt, pepper, oregano, and thyme. Toss to coat evenly.
  4. Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through until tender and caramelized.
  5. Remove from the oven and garnish with fresh parsley before serving.
