  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • ½ teaspoon smoked paprika (optional)
  • Fresh chives or green onions, for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another 1–2 minutes.
  2. Add flour to form a roux, cooking for an additional 1–2 minutes until golden.
  3. Gradually incorporate the vegetable broth while stirring continuously. Add the diced potatoes, thyme, dill, salt, pepper, and smoked paprika if desired; bring to a boil.
  4. Lower heat and simmer uncovered for about 20–25 minutes until potatoes are tender.
  5. Using an immersion blender or stand blender, partially blend the soup for a creamy texture while leaving some chunks.
  6. Stir in almond milk (or whole milk) and shredded cheddar cheese until melted; simmer for an additional 5 minutes.
  7. Adjust seasoning as needed before serving hot with garnishes of fresh chives or extra cheese.
