  • 1 large chicken breast roast (about 800 g)
  • 600 g baby potatoes (red & yellow mix if possible)
  • 5 tbsp olive oil
  • 3 garlic cloves, minced
  • Fresh parsley, thyme, and rosemary
  • Juice of 1 lemon
  • Salt and pepper
  • 1 cup chicken broth for pan sauce

Instructions

  1. Preheat your oven to 200C (390F).
  2. Rub the chicken breast with olive oil and season generously with minced garlic, herbs, lemon juice, salt, and pepper.
  3. Toss baby potatoes with olive oil, salt, and pepper in a mixing bowl.
  4. Arrange the seasoned chicken in a baking dish and scatter the potatoes around it.
  5. Roast for 40-45 minutes until the chicken is cooked through and golden brown.
  6. For the pan sauce, deglaze the baking dish with chicken broth after removing the chicken and potatoes; stir in butter.
