  • 1 lb boneless, skinless chicken breasts (cut into cubes)
  • 12 oz rigatoni pasta
  • 4 tbsp butter
  • 4 cloves garlic (minced)
  • 3 cups whole milk
  • 8 oz Velveeta cheese (cubed)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Cook the rigatoni in a large pot of salted boiling water until al dente; drain and set aside.
  2. In a bowl, toss chicken cubes with olive oil, Cajun seasoning, garlic powder, and smoked paprika.
  3. In a skillet over medium-high heat, sauté the seasoned chicken until golden brown and cooked through; remove from skillet.
  4. In the same skillet, melt butter and add minced garlic; sauté for one minute.
  5. Whisk in flour to create a roux, then slowly add milk while whisking until slightly thickened.
  6. Stir in Velveeta and cream cheese until melted; then add mozzarella until combined.
  7. Return cooked chicken and rigatoni to the skillet; toss everything together until well coated.
