  • 1 tablespoon Cajun seasoning

  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 4 cloves garlic (minced)
  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta (cubed)
  • 1 cup shredded mozzarella
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. In a large deep skillet or Dutch oven, heat olive oil over medium-high heat. Add chicken pieces, seasoning with Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper. Cook until golden brown (6–8 minutes). Remove chicken and set aside.
  2. In the same pan, add chicken broth and bring to a simmer. Stir in rotini pasta, cover, and cook for 10–12 minutes until tender.
  3. Reduce heat to low and mix in heavy cream, Velveeta cheese, and Parmesan until fully melted and creamy.
  4. Return the cooked chicken to the pan; stir to coat in sauce.
  5. Sprinkle mozzarella on top; cover until melted (2–3 minutes).
  6. Garnish with chopped parsley before serving hot.
