  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (or other fruit-flavored crispy cereal, divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together room temperature butter and granulated sugar with ½ cup of Fruity PEBBLES™ until fluffy.
  3. Add in the egg and vanilla extract; mix until combined.
  4. Gradually incorporate flour, baking soda, and salt until just combined.
  5. Fold in 1 cup of Fruity PEBBLES™ cereal gently.
  6. Scoop about 3–4 tablespoons of dough, flatten it, place one vegan marshmallow in the center, and wrap the dough around it.
  7. Roll each ball in the remaining ½ cup of Fruity PEBBLES™ before placing on a lined baking sheet.
  8. Bake for 8–11 minutes until marshmallows peek through cracks.
  9. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
