  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 envelope onion soup mix
  • 1 cup shredded cheddar cheese
  • 12 cups frozen mixed vegetables
  • Butter (for greasing)
  • 1 can (10.5 oz) water (use the empty soup can for measurement)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole dish with butter.
  2. In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, water, and uncooked instant rice. Mix well.
  3. Spread the rice mixture evenly in the prepared casserole dish.
  4. Stir in any optional frozen vegetables or cheese.
  5. Place the raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover with aluminum foil and bake for 60 minutes without removing the foil.
  7. After baking, check that the chicken is cooked through (165°F /75°C). Optionally broil uncovered for 3–5 minutes for a golden top.
  8. Let rest for 5–10 minutes before serving.
