  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1 cup heavy cream
  • 1 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Wooden or paper lollipop sticks

Instructions

  1. Wash and dry the apples thoroughly. Remove stems and insert a stick into each apple.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, cream, and butter. Heat over medium heat, stirring constantly until melted.
  3. Stop stirring once boiling; insert a candy thermometer and cook until it reaches 245°F (Firm Ball Stage), about 15 to 20 minutes.
  4. Remove from heat; stir in vanilla extract and salt. Allow to cool for about 5 minutes.
  5. Dip each apple into the caramel mixture, rotating to coat evenly. Let excess caramel drip off.
  6. Place coated apples on a baking sheet lined with parchment paper or silicone mat, allowing them to set at room temperature for at least one hour before serving.
