  • 2 medium-sized oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams finely ground pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Thoroughly wash the oranges, place them in a pot, and cover with water. Boil for about 30 minutes until soft, then let cool.
  2. Cut the cooled oranges in half, remove seeds, and blend into a smooth puree using a food processor.
  3. In the food processor, add sugar, almond meal, ground pistachios, baking powder, and salt; blend until well combined.
  4. In a large bowl, whisk eggs until frothy; gradually mix in the orange-nut mixture until you have a smooth batter.
  5. Preheat oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour batter into the prepared pan and smooth the top. Bake for 45-50 minutes or until golden brown and set.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
