  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F and prepare a kettle of boiling water for the water bath.
  2. In a saucepan, combine sugar and water to make caramel; cook until amber-colored, then pour into a non-stick cake pan.
  3. Blend condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt until smooth; strain into the prepared cake pan over caramel.
  4. Cover the cake pan with foil and place it inside a larger roasting pan filled halfway with hot water.
  5. Bake for 70–80 minutes until set; cool at room temperature before refrigerating for at least six hours or overnight.
  6. To serve, run a knife around the edges and invert onto a platter; garnish with fresh berries.
