  • 30 g unsalted butter
  • 1 large leek, finely chopped (white part only)
  • 1 medium carrot, chopped
  • 5 medium potatoes, peeled and cubed
  • 1.25 liters fish stock
  • 450 g salmon fillets, skinned and cut into cubes
  • 150 ml double cream (heavy cream)
  • 1 bunch dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large heavy-bottomed pot, melt the butter over medium heat. Sauté the finely chopped leek for about 7-8 minutes until softened.
  2. Add the chopped carrot and potatoes to the pot, then pour in the fish stock to cover the vegetables. Cook for approximately 10 minutes until the potatoes are nearly fork-tender.
  3. Gently add the salmon cubes and stir in the double cream. Simmer for an additional 3-4 minutes until the salmon is cooked through.
  4. Stir in the chopped dill and simmer for another minute to blend flavors. Season with salt and pepper before serving.
