  • 1 yellow onion
  • 2 celery ribs
  • 3 carrots
  • 4 garlic cloves
  • Salt (to taste)
  • 1 cup pastina (small pasta shape)
  • Parmigiano cheese (for garnish)

Instructions

  1. In a large pot, combine water (or half vegetable broth) with halved onion, celery, carrots, garlic, and salt. Bring to a boil.
  2. Reduce heat to medium-low and simmer uncovered for about 45 minutes until vegetables are soft.
  3. Using a slotted spoon, transfer cooked vegetables to a blender along with two ladles of broth. Blend until smooth.
  4. Return blended mixture to the pot with the remaining broth.
  5. In a separate pot, cook pastina according to package instructions until al dente.
  6. Serve by adding cooked pastina to bowls and topping with hot broth and grated Parmigiano.
