  • 4 cups chicken broth
  • 1 can crushed tomatoes (14 oz)
  • 1 can diced tomatoes (14 oz)
  • 1 can red kidney beans (14 oz)
  • 1 can cannellini beans (14 oz)
  • 3 sticks celery, chopped
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 teaspoons garlic, minced
  • 3/4 cup uncooked ditalini pasta
  • Seasonings: red apple vinegar, Italian seasoning, sugar, dried basil, dried oregano, crushed red pepper flakes

Instructions

  1. In a soup pot over medium-high heat, brown the ground beef until cooked through.
  2. Add chopped onion, celery, carrots, and garlic; cook for about 8–10 minutes until softened.
  3. Stir in crushed tomatoes, diced tomatoes, drained beans, chicken broth, vinegar, sugar, Italian seasoning, oregano, basil, and red pepper flakes. Bring to a boil.
  4. Reduce heat to simmer for 15–20 minutes to meld flavors.
  5. Add ditalini pasta; simmer until tender (15–20 minutes). Alternatively, cook pasta separately to prevent overcooking.
  6. Adjust seasoning with salt and pepper before serving.
