  • 3 large carrots, peeled and chopped
  • 2 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1½ cups dry ditalini pasta
  • Fresh spinach for garnish

Instructions

  1. In a large soup pot, cook the ground turkey, carrots, celery, onion, and bell pepper over medium-high heat until the turkey is browned and onions are translucent (about 5 minutes).
  2. Stir in minced garlic, Italian seasoning, and salt; cook for an additional minute.
  3. Add chicken broth and scrape the bottom of the pot to incorporate all flavors.
  4. Bring to a simmer; reduce heat to medium-low, cover, and cook for about 10 minutes until veggies are nearly tender.
  5. Add ditalini pasta; cover again and cook for another 10 minutes until pasta is al dente.
  6. Stir in fresh spinach just before serving.
