  • 3 cups uncooked pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup little tomatoes (halved)
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon brown sugar

Instructions

  1. Cook pasta according to package directions in salted boiling water until al dente. Drain and rinse under cool water.
  2. In a jar, combine dressing ingredients and shake until blended.
  3. In a large bowl, mix cooled pasta with chopped vegetables and olives.
  4. Pour dressing over the salad and toss until well coated. Season with salt and pepper as needed.
  5. Chill for at least an hour for best flavor before serving.
