  • 1 medium red onion (quartered and thinly sliced)
  • ½ cup extra-virgin olive oil
  • 2 lemons (zest and juice)
  • 2 tablespoons red apple vinegar
  • 2 tablespoons capers (drained, roughly chopped)
  • 1 teaspoon minced garlic
  • Fresh herbs for garnish (oregano and parsley)

Instructions

  1. Trim and chop the celery leaves; slice the celery stalks diagonally into ¼-inch pieces.
  2. In a large bowl, combine celery and sliced red onion.
  3. In a separate bowl, whisk together olive oil, lemon juice, lemon zest, red apple vinegar, capers, minced garlic, and optional celery seed.
  4. Pour the dressing over the celery and onion mixture; toss well to coat.
  5. For best flavor, cover and refrigerate for at least one hour before serving.
