  1. In a medium pot, bring 5 cups of water to a boil. Add tapioca pearls and cook on medium heat for 10 minutes. Cover and soak for an additional 10-15 minutes until translucent.
  2. Strain cooked tapioca using a fine mesh sieve and rinse with cold water.
  3. In a large bowl, mix the drained tapioca with smooth coconut milk.
  4. Blend 17.6 oz of hulled strawberries with sweetened condensed milk until smooth.
  5. Combine the strawberry mixture with the tapioca and mix well; adjust sweetness if desired.
  6. Dice remaining strawberries for garnish.
