  • 1 can coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger
  • 1620 frozen veggie dumplings
  • 2 bok choy bulbs
  • 1 zucchini

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil; whisk until smooth.
  3. Grate garlic and ginger into the mixture.
  4. Chop bok choy and zucchini; stir into the broth.
  5. Arrange frozen dumplings on top of the veggies and press them into the broth.
  6. Cover with foil and bake for 20 minutes; remove foil and bake an additional 5–10 minutes until bubbly.
