  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter (melted)
  • 3/4 cup Brown sugar (packed light or dark)
  • 3 Large ripe bananas (mashed)
  • 2 Large eggs (room temperature)
  • 1/2 cup Sour cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 1 cup Semi-sweet chocolate chips (plus a little extra to go on top of batter)
  • 1/4 cup Mini chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5 loaf pan with non-stick spray and parchment paper.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt; set aside.
  3. Mash the bananas in a small bowl until smooth.
  4. In another medium bowl, whisk melted butter and brown sugar into a thick paste; then mix in mashed bananas, sour cream, and vanilla until well combined.
  5. Add eggs one at a time, mixing thoroughly after each addition. Gradually incorporate dry ingredients into the wet mixture until just combined; fold in chocolate chips.
  6. Pour the batter into the prepared pan, filling it about three-quarters full. Sprinkle extra chocolate chips on top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan before transferring to a wire rack.
