  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup pineapple juice
  • 1 cup pineapple chunks
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 green onions, sliced

Instructions

  1. Pat the chicken dry and season with salt and pepper. Toss in cornstarch until evenly coated.
  2. Heat vegetable oil in a nonstick skillet over medium-high heat. Cook chicken in batches for 5-7 minutes until golden brown. Remove from pan.
  3. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, vinegar, garlic, and ginger.
  4. Pour the sauce into the skillet and bring to a simmer. Whisk in a cornstarch slurry until thickened (about 2–3 minutes).
  5. Add cooked chicken and pineapple chunks back into the pan, stirring until well coated and heated through.
