  • 1 cup cherry tomatoes, quartered
  • 1 red bell pepper, diced

  • 1 jalapeño pepper, minced (optional)
  • 1 avocado, diced
  • Fresh cilantro, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, honey/agave syrup, ground cumin, smoked paprika, chili powder, salt, and black pepper.
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, cherry tomatoes, red bell pepper, red onion, jalapeño (if using), and cilantro.
  3. Pour the dressing over the salad ingredients and toss until everything is evenly coated.
  4. Gently fold in the diced avocado to keep it intact.
