  • 2 Cups White Kidney Beans, Cooked
  • 24 Oz Canned Diced Tomatoes
  • 44 Oz Beef Stock
  • 4 Oz Dry Small Pasta (Shells, Elbows, or Ditalini)
  • 11/2 Tsp Olive Oil
  • 6 Oz Onion, Chopped
  • 7 Oz Carrots, Slivered
  • 7 Oz Celery, Diced
  • 11/2 Tsp Oregano
  • 11/4 Tsp Fresh Black Pepper
  • 1 Tbsp Fresh Flat-Leaf Parsley
  • 1 Tsp Tabasco-Type Hot Sauce
  • 24 Oz Marinara Sauce

Instructions

  1. In a large pot over medium heat, warm olive oil. Add ground beef and cook until browned.
  2. Stir in chopped onion, slivered carrots, and diced celery; sauté for about 5 minutes until tender.
  3. Mix in canned diced tomatoes along with their juices.
  4. Incorporate cooked red and white kidney beans.
  5. Pour in beef stock and stir well.
  6. Season with oregano and black pepper; bring to a boil then reduce heat to low.
  7. Cover and simmer for 30 minutes to blend flavors.
  8. Add fresh parsley and Tabasco sauce to taste.
