  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar

  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until light and fluffy. Add egg and vanilla extract; mix well.
  3. Gradually incorporate flour, salt, and baking powder into wet ingredients until just combined.
  4. Use a cookie scoop to form balls of dough on the prepared sheet, flattening each to about 1 inch thick, then create space in the center for filling.
  5. Bake for 8-9 minutes until lightly golden around the edges; cool before transferring to a wire rack.
