  • 1 (14 ounce) can diced tomatoes (with juices)
  • 4 cups chicken broth
  • 2 (9 ounce) packages refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • 3/4 cup heavy cream (optional)

Instructions

  1. In a skillet, brown the chicken sausage and onions over medium heat for about 7-8 minutes. Drain excess fat if necessary.
  2. Stir in minced garlic and cook for an additional 30 seconds before transferring to the slow cooker.
  3. Add chopped carrots, celery, canned tomatoes, and chicken broth to the slow cooker.
  4. For faster cooking, chop carrots finely; otherwise, leave them in larger pieces for longer cooking times.
