  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil (optional for searing)
  • 1/4 tsp dried thyme (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Season chicken breasts with salt, black pepper, garlic powder, onion powder, and paprika.
  2. If using olive oil, heat it in a skillet over medium heat. Sear each piece of chicken for 2–3 minutes on each side until browned.
  3. Place the seasoned chicken into the crockpot. In a separate bowl, whisk together chicken broth, cream of chicken soup, and thyme if using. Pour this mixture over the chicken.
  4. Cover your crockpot and cook on low for 6 hours or high for 3 hours until the chicken is tender.
  5. About 30 minutes before serving, mix cornstarch with water in a small bowl. Stir this mixture into the gravy in the crockpot to thicken it up.
  6. You can shred the chicken or leave it whole; it's up to you! Garnish with chopped parsley before serving hot.
