Ingredients

Scale
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)
  • 1 large sweet onion (peeled and chopped)
  • 34 cloves garlic (minced)
  • ¼ cup chopped cilantro
  • 7 ounces chopped green chiles (mild or hot)
  • 1 cup frozen corn
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano

Instructions

  1. Melt butter in a large pot over medium heat. Sauté the chopped onion until softened (about 5 minutes), then add minced garlic for another minute.
  2. Stir in ground cumin and dried oregano, allowing them to toast slightly.
  3. Add boneless chicken breast and pour in enough chicken broth to cover it. Bring to a boil, then reduce heat to simmer.
  4. Once cooked through (about 15 minutes), shred the chicken and return it to the pot. Mix in cannellini beans, green chiles, frozen corn, and cream cheese.
  5. Stir until cream cheese is melted; let simmer for an additional 5-10 minutes on low heat.
  6. Serve hot with your favorite garnishes.
