  • 1 pound boneless, skinless chicken breasts
  • 16 ounces rotini pasta
  • 4 cups chicken broth
  • 32 ounces Velveeta cheese
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Chopped chives for garnish

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter. Add chicken pieces, minced garlic, Cajun seasoning, paprika, and black pepper; sear until golden brown (6-8 minutes). Remove and set aside.
  2. In the same skillet, add remaining butter and rotini pasta with chicken broth. Bring to a boil; reduce heat and simmer for 12-15 minutes until pasta is al dente.
  3. Lower the heat and stir in cubed Velveeta cheese and heavy cream until melted and smooth.
  4. Return seared chicken to the skillet, mix in shredded cheddar cheese until melted. Season with salt to taste.
  5. Serve immediately garnished with chopped chives if desired.
