  • 1 lb chicken or beef sausage
  • 3 cups mirepoix veggies (celery, carrots, onion, diced)
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • 3 heaping tablespoons sun-dried tomatoes, chopped
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1 tablespoon flour
  • 4 cups low-sodium chicken stock or broth
  • 1 can (14.5 oz) crushed tomatoes
  • 10 oz cheese tortellini
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups spinach, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  2. Stir in mirepoix vegetables and sauté until softened. Add garlic and seasonings; cook until fragrant.
  3. Pour in chicken stock and crushed tomatoes; simmer until slightly thickened.
  4. Add tortellini and white beans; cook until the tortellini float to the top.
  5. Stir in cooked sausage, spinach, heavy cream, and Parmesan until well combined. Serve hot.
