Creamy Tomato Basil Soup is a warm, comforting dish that perfectly balances rich flavors and vibrant aromas. Made with fresh tomatoes, fragrant basil, and a creamy texture, this soup is a quick and healthy option for any meal.

Ingredients

  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. fresh tomatoes (roma, plum, or on the vine)
  • 1/2 cup basil leaves (or 2 teaspoons dried)
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prepare the onion and garlic. Cut tomatoes into quarters.
  2. Heat olive oil or water in a heavy-bottom pan over medium heat. Sauté the onion until soft (about 7 minutes), then add garlic for another minute.
  3. Add tomatoes, basil, oregano, salt, pepper, and broth to the pan.
  4. Bring to a boil, cover, and simmer for about 15 minutes.
  5. Allow to cool slightly, then blend until smooth using an immersion blender.
  6. Adjust seasoning if needed and stir in vegan cream before serving hot.
