  • 200g salmon fillet (skin removed)
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove (minced)
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare white rice according to package instructions; keep warm.
  2. Steam broccoli florets for 4-5 minutes until bright green and tender-crisp; set aside.
  3. Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear salmon chunks for about 2-3 minutes per side until lightly golden; remove from skillet.
  4. In the same pan, sauté minced garlic until fragrant. Stir in heavy cream and pesto, simmering gently for about 2 minutes until slightly thickened.
  5. Add seared salmon and steamed broccoli to the sauce, tossing gently to coat. Serve over warm rice.
