  • 1 lb rotini pasta
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup chopped fresh chives

Instructions

  1. Season chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Cook the chicken until golden brown (about 6-8 minutes) and remove from skillet.
  3. In the same skillet, melt butter and add minced garlic; cook until fragrant. Set aside.
  4. Cook rotini according to package instructions until al dente; drain and reserve some pasta water.
  5. In a large pot, melt butter and sauté garlic until fragrant. Add heavy cream and chicken broth; bring to a simmer.
  6. Stir in Parmesan cheese, seasonings, and simmer until thickened.
  7. Combine cooked rotini with the sauce; if too thick, add reserved pasta water to achieve desired consistency.
  8. Fold in the garlic butter chicken and serve immediately.
