  • 1 tablespoon chopped fresh dill
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 ½ cups whole milk
  • ¾ cup sour cream
  • 2 tablespoons apple vinegar or apple juice vinegar
  • ½ cup chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced mushrooms and diced onions, cooking until the onions are translucent, about 15 minutes.
  2. Transfer the mixture to a bowl. Melt butter in the pot, then whisk in flour, paprika, dill, salt, and pepper. Cook for about a minute until fragrant.
  3. Deglaze with apple vinegar and gradually whisk in the broth until smooth. Stir in the mushroom mixture and let simmer until reduced by half.
  4. Whisk in milk and sour cream until combined. Simmer briefly before adding vinegar and remove from heat. Garnish with parsley before serving.
